I may have hit the mother load with this one….
Being 9 months pregnant… a girl gets a few cravings from time to time. The latest being rocky road ice cream.
After looking high and low at the usual health food grocers, I couldn’t seem to find even one vegan brand that makes this particular flavor. So I decided to make my own. My own healthy vegan rocky road nice cream
As you might already know, traditional rocky road ice cream is made with heavy cream, evaporated milk, cocoa powder, vanilla extract, marshmallows, nuts, and chunks of chocolate. Just a half cup clocks you in at about 300 calories and 18g of fat!
The base for my recipe is banana soft serve aka “banana nice cream.” Its nice to your waistline, and still tastes just like the regular full fat version.
I switched out the heavy cream and evaporated milk for a frozen banana and almond milk. I used raw cacao powder instead of traditional cocoa powder which gives you extra magnesium, fiber, iron, and antioxidants!
I used vegan marshmallows, instead of the ones made with gelatin.

With all vegan ingredients, you can be sure you are getting a much healthier treat! Say whaaa… healthy ice cream? Well with the fix-ins of course, there is a little added sugar… but definitely much less than the alternative! So I say dig in!
Vegan Rocky Road Nice Cream
Ingredients:
- 2- 2 1/2 frozen bananas
- 1/8-1/4c. of non-dairy milk
- about 3 tbsp. raw cacao powder, start with 2 tbsp. and then taste test to make sure its chocolatey enough for you (or regular cocoa powder)
- 1 tsp. vanilla extract (not pictured)
- handful of Dandies vegan marshmallows (I gently ripped my marshmallows into halves)
- handful of mini chocolate chips (I used Enjoy Life Brand)
- handful of crumbled or chopped nuts (I used pecans and walnuts)
Directions:
Put the frozen bananas, milk, and raw cacao powder into your food processor and process until you have a smooth and creamy consistency, stirring to make sure you don’t have chunks. Add your vanilla extract, and pulse again just until mixed in well. Scoop your chocolate soft serve into a medium sized bowl. Toss in your marshmallows, chocolate chips, and chopped nuts. Incorporate well. Put your ice cream into the freezer and let it set for about 45 minutes to one hour (or until slightly frozen but not frozen solid). Take out, and transfer with an ice-cream scooper to a new bowl. Serve immediately, as it melts fast!

The “nice cream” wasn’t my idea actually, I’ve seen it called that somewhere before! But I thought it was pretty cute too lol. Hope you like it!!
